Profile
There is a considerable gap between what this drink is called and what it tastes like, and the gap is the entire joke. The name lands like a dare. The drink is butterscotch, peach, sour apple and watermelon schnapps, softened with cranberry and pineapple juice. It tastes like a fruit basket that got into the liquor cabinet.
Six ingredients, half an ounce each, no technique and no pretence. The Pierce Clit is a late-1990s bar in a glass, from the years when DeKuyper Pucker came in every color of the spectrum and nobody was asking where the vermouth was. The two juices are the only thing keeping it honest: cranberry brings tartness to cut four sweet liqueurs, and pineapple adds enough body that the whole thing does not taste like flavored syrup.
Glass: Cocktail glass | Strength: Light | Serves: 1 | Prep Time: 2 minutes
Bartender’s tip: Stir it properly. Six equal pours of differing density will settle into layers if you leave them alone, and the first mouthful will taste like butterscotch while the last tastes like cranberry. The equal-parts build also scales up cleanly for a group, which is clearly what it was designed for, though keep the pours small. This is sweet enough that the second one is a decision rather than a habit.
