Profile
The Poker Face is a tall, easygoing tequila drink you could make in your sleep: tequila, Cointreau and pineapple juice poured over ice in a highball glass, stirred, and finished with a lime wedge. It reads like a margarita that traded its lime juice for pineapple and stretched out into a long drink.
The tequila brings its peppery, earthy agave flavor, Cointreau adds clean orange sweetness, and the pineapple juice fills out the glass with tropical fruit and a little tang. Pineapple and tequila are a natural match, so everything falls into place without much effort. The lime wedge isn’t just for show, either. Squeezing it in adds the sharp citrus edge that keeps the drink from tasting too sweet. It goes down easily, which is right around when keeping a straight face starts to get harder.
Glass: Highball glass | Strength: Medium | Serves: 1 | Prep Time: 2 minutes
Bartenders tip: A blanco tequila keeps it bright and fruity, while a reposado gives it a rounder, slightly vanilla note. Fresh pineapple juice is noticeably better than canned and gives the drink a light froth on top when stirred. If you like it tarter, add half an ounce of fresh lime juice before stirring.
Steps
- Pour tequila, Cointreau and pineapple juice into a highball glass almost filled with ice cubes.
- Stir, garnish with a lime wedge, and serve.
