Profile
The Pine Cone is Southern Comfort and amaretto lengthened with pineapple juice, built straight in the glass over ice. Three ounces of liqueur is a serious pour, and neither one is dry, so this sits firmly on the sweet side and makes no apology for it.
The name is doing some work here. There is nothing piney in the drink, and the pine reference is really just pineapple shortened. What you actually get is peach and orchard fruit from the Southern Comfort, marzipan and stone fruit from the amaretto, and pineapple tying the two together. They land in similar territory, which is why the drink works despite having no sour element to balance it.
Glass: Collins glass | Strength: Medium | Serves: 1 | Prep Time: 2 minutes
Bartender’s tip: A jigger is an ounce and a half, so this is three ounces of liqueur before the juice goes anywhere near it. If that reads as too sweet, and it will for a lot of people, cut the amaretto to a half jigger and add a squeeze of lemon. That single change turns it from a dessert drink into something you can have two of. Build it in the order given, spirits first over ice, then juice, then stir. Pouring the juice in first means you will be stirring twice as long to get it mixed.
Steps
- Pour southern comfort on the rocks in a tall glass.
- Add amaretto, fill with pineapple juice, and stir.
