Profile
The Pineapple Bomber is Southern Comfort, amaretto and pineapple juice in equal parts over ice. If that sounds familiar it should, because it is the same three ingredients as the Pine Cone. The difference is the format. The Pine Cone fixes its pour at a jigger of each and lengthens it in a Collins glass, while the Bomber works on ratio and tells you to add at least an equal part of juice, or more if you want it softer.
That instruction is the whole character of the drink. Equal parts of all three is aggressive, roughly two thirds liqueur, and it drinks like a dessert. Push the juice to two or three parts and it turns into something much closer to a long summer highball. The recipe is written as a starting point rather than a fixed measure, which is unusual and worth taking advantage of.
Glass: Highball glass | Strength: Medium | Serves: 1 | Prep Time: 2 minutes
Bartender’s tip: Bomber in a drink name usually means a shot, and this one was almost certainly a shooter before somebody stretched it into a highball. That history shows in the balance, since there is no sour element anywhere in it. A half ounce of lemon juice fixes that completely and costs you nothing. Pour the two liqueurs first and the juice last so you can judge the color as it goes in and stop when it looks right rather than measuring blind.
Steps
- Pour equal parts of amaretto and southern comfort into an ice-filled highball glass.
- Add (at least) another equal part of pineapple juice to fill, and serve.
