The Pineapple Cocktail is a long, light rum drink built straight in a Collins glass and topped with club soda. Despite the name it is not a cocktail in the short stemmed-glass sense at all, and the proportions put it much closer to a rum punch stretched out with soda water.
The grenadine is doing more than sweetening. Poured in with everything else and left to settle rather than stirred through, it sinks and gives the drink a red base fading up into pale gold. That gradient is most of the visual appeal, and stirring vigorously will flatten it into a uniform pink. A full shot of lemon juice against two shots of pineapple keeps it dry enough that the grenadine reads as color and depth rather than syrup.

Bartender’s tip: Add the club soda before the ice rather than after. Pouring soda over a full glass of cubes knocks most of the carbonation out on the way down, and this drink has nothing else lifting it. Build the base, add soda gently down the side, then drop the ice in last. If you want the layered look to hold, pour the grenadine down the inside wall at the end and leave it alone. It will find the bottom on its own within a few seconds.
Ingredients
- 1 shot Light Rum
- 1 shot Lemon Juice
- 2 shots Pineapple Juice
- Club Soda
- 1/2 shot Grenadine
Steps
- Pour rum, pineapple juice, grenadine and lemon juice into a collins glass.
- Fill with club soda, or to taste.
- Serve with ice.
