Pirate’s Float is spiced rum and beer topped up with Coca-Cola and served on the rocks. It sounds like something invented at the end of a long night, and it may well have been, but the logic holds up better than you might think. Spiced rum and cola are an established pairing, and a splash of beer adds a malty, slightly bitter note that cuts through the sweetness.
Equal amounts of beer and rum go in first, and the cola goes in to taste, so you can make it as light or as strong as you like. It is an easygoing drink for a cookout, where all three ingredients are probably already in the cooler.

Bartenders tip: Use a lager or a light amber rather than a hoppy IPA, whose bitterness clashes with the cola and the spice. Pour the beer and the cola gently down the side of the glass so the drink does not foam over. Start with about three ounces of cola and adjust from there. The original lists it only as a part, which really means as much as you like.
