Pisang Pistace is a creamy after-dinner drink made from Pisang Ambon, amaretto and cream, shaken and served in a cocktail glass. The name almost certainly comes from the color. Bright green banana liqueur plus cream lands on a soft, pale green that looks remarkably like pistachio ice cream, even though there are no pistachios anywhere near it.
Where it gets interesting is the taste. Pisang Ambon brings ripe banana and a little tropical sweetness, amaretto adds a toasted almond note, and the cream rounds everything out. Together they drift toward banana bread or a banana split with nuts on top, which makes the pistachio name feel less like a stretch. It is rich and sweet, closer to dessert than to a cocktail you would sip before dinner.

Bartenders tip: With a 3:2:1 ratio, half an ounce per part gives you a three-ounce drink that fits a standard coupe. Shake hard so the cream gets a little air in it and the texture turns silky. The original calls for two ice cubes in the glass, but you can strain it straight up if you prefer. Heavy cream makes it richer, while half and half keeps it lighter.
Steps
- Add all ingredients to a shaker with five or six ice cubes and shake well.
- Strain into a cocktail glass over two ice cubes and serve.
