Profile
There’s a reason this drink shows up on menus and feeds everywhere lately. Layered right, a Strawberry Iced Matcha Latte looks like three distinct drinks stacked in one glass, a deep red strawberry base, a clean layer of milk, and a vivid green matcha float on top, all before you even stir it. It’s genuinely more approachable than it looks. No espresso machine, no specialty equipment, just a blender, a whisk, and a little patience while you pour.
Matcha is the ingredient doing the most work here, and it rewards a bit of care. Good matcha has a grassy, slightly vegetal sweetness that’s easy to ruin with water that’s too hot, boiling water scorches the powder and turns it bitter and dull instead of bright and smooth. Whisking it properly, in a brisk zigzag rather than a circular stir, is what gives it that light, frothy top layer instead of a flat, clumpy one. The strawberry purxc3xa9e underneath brings natural sweetness and tartness that balances matcha’s earthiness, so the whole drink reads as fruity and green in equal measure rather than one flavor drowning out the other.
The layering itself is mostly about pour technique, not precision. Milk poured slowly over ice sits above a heavier strawberry purxc3xa9e almost automatically, and matcha poured gently over the back of a spoon floats on top of the milk instead of sinking through it. Nobody expects the layers to survive first sip, that’s part of the fun, one stir and it turns into a fully blended, strawberry-matcha latte that tastes as good as it looked a second ago.
Glass: Tall glass | Strength: Non-alcoholic | Serves: 1 | Prep Time: 8 minutes
Bartender’s tip: Water temperature matters more than people think. Aim for around 175xc2xb0F, just off the boil, not straight from the kettle. Too hot and the matcha turns bitter no matter how good the powder is.
Ingredients
- 1 teaspoon of high-quality matcha powder
- 2 ounces of hot water (not boiling)
- 1 cup of fresh strawberries, hulled and sliced
- 1 tablespoon of granulated sugar (adjust to taste)
- 1/2 cup of milk (dairy or plant-based)
- Ice cubes
- Optional: additional sliced strawberries for garnish
Steps
- Make the strawberry purée: In a blender, combine the sliced strawberries and granulated sugar. Blend until smooth, then pour the purée into the bottom of a tall glass.
- Add ice: Add a few ice cubes on top of the purée.
- Whisk the matcha: Sift the matcha powder into a small bowl to remove lumps, add the hot water, and whisk vigorously in a zigzag motion until fully dissolved with a light froth on top.
- Layer the milk: Slowly pour the milk over the ice and strawberry purée so it sits as a distinct layer above the strawberry base.
- Float the matcha: Gently pour the whisked matcha over the back of a spoon onto the milk layer so it floats rather than sinks.
- Garnish and serve: Add a few extra strawberry slices on top if you like, then serve immediately with a straw. Stir before drinking to blend the layers.
