The Perfect Lady is a gin sour from the 1930s, softened with peach brandy and given body with egg white. Shaken properly, it pours pale and silky under a light foam cap, more elegant than sweet. It belongs to the same family of egg white gin sours as the White Lady and the Clover Club, drinks from an era when a stable, good-looking foam was the mark of a serious bartender.
Peach brandy was far more common on back bars back then, which is part of why this drink drifted out of rotation while some of its contemporaries stayed on menus. It is worth knowing the difference between peach brandy and peach liqueur, because they get mixed up constantly. Peach brandy is a spirit, with a drier, more spirit-forward peach flavor. Peach liqueur, often sold as crème de pêche, is sweeter and lower in alcohol. The original calls for brandy, which keeps the drink from tipping sweet against the lemon juice.
In the glass, the gin’s botanicals come through first, the peach adds a soft, ripe roundness, and the lemon keeps everything bright. The egg white does not add much flavor, but it turns the texture silky and smooth. It deserves a lot more attention than it gets.

Bartenders tip: Do not skip the dry shake. Shaking without ice first lets the egg white whip up and trap air before the cold thickens it, and skipping it is the most common reason an egg white drink comes out flat. Shake hard on the second round too, or the foam will collapse quickly. Double strain so no ice shards break up the foam, and serve it right away. A fresh egg separated by hand foams more reliably than some carton whites. If peach liqueur is all you have, it still works, just expect a sweeter drink and consider a touch more lemon.
Steps
- Dry shake: Combine the gin, peach brandy, lemon juice, and egg white in a shaker without ice. Shake hard for about 15 seconds. This whips the egg white before it gets diluted, which is what gives the drink its foam.
- Shake again with ice: Add ice and shake hard for another 12 to 15 seconds to chill it fully.
- Strain: Double strain into a chilled coupe or cocktail glass to keep out any ice shards.
- Garnish and serve: Add a peach slice and serve immediately, while the foam is at its best.
