Profile
Named after the candy, and honestly not far off. PEZ is equal parts spiced rum, raspberry liqueur and sweet and sour mix, shaken cold and strained, and it hits the same note the dispenser did: bright artificial fruit with a bit of spice behind it.
The spiced rum is what saves it from being a raspberry sweet in a glass. Vanilla, cinnamon and clove sit underneath the fruit and give the drink some depth, while the sour mix supplies the acidity that keeps two sweet ingredients from collapsing into each other. Equal parts across three ingredients makes it easy to remember and easy to build badly, since there is nothing in the ratio doing any correcting for you.
Glass: Whiskey sour glass | Strength: Medium | Serves: 1 | Prep Time: 3 minutes
Bartender’s tip: Treat the sour mix as the adjustable one. Equal parts is a starting point rather than a rule, and most bottled sour mixes are sweeter than they are sour, so taste it and add a squeeze of fresh lemon if it needs sharpening. Shake it harder and longer than feels necessary too. This wants to be properly cold and slightly aerated, and it turns sticky as soon as it warms.
Steps
- Shake: Combine all ingredients over ice in a shaker, shake well.
- Strain and serve: Strain into a chilled whiskey sour glass and serve.
