The name is doing all the heavy lifting here, because the drink itself is remarkably well behaved. Equal parts bourbon and peach schnapps, shaken cold, strained, finished with a twist of citrus. Somebody plainly enjoyed the moment of ordering the Pillow Biter rather more than the moment of drinking it.
Which is a shame, because the pairing is sound. Bourbon and peach belong together and always have, whether in a cobbler, a smash or a pie. The schnapps rounds off the corners of the whiskey while the bourbon stops the peach from tasting like a candle. That is the whole trick of a two-ingredient drink: each one has to fix a problem the other one has.

Bartender’s tip: Three quarters of an ounce each comes to an ounce and a half of liquid, which looks stranded in a highball glass and rather undercuts the swagger of the name. Two options. Serve it in a rocks glass over one large cube, where the volume makes sense, or keep the highball and lengthen it with soda over ice into something you can nurse on a warm afternoon. Use lemon rather than orange for the twist, since the sharper oil cuts the schnapps.

- Pour the bourbon whiskey and peach schnapps into a cocktail shaker half-filled with ice cubes.
- Shake well, and strain into a powder-rimmed highball glass.
- Add a twist of citrus fruit for flavor, and serve.
