Profile
The Pink Agave is three ounces of tequila hidden inside eight ounces of pineapple juice, served in a beer mug packed with crushed ice. The splash of grenadine is not really an ingredient so much as an instruction, since the recipe tells you to keep stirring until the color arrives.
The beer mug is the giveaway. Nobody reaches for a beer mug because the drink demands one, they reach for it because they want eleven ounces of something in a container with a handle. That puts this in the same family as a Mexican Bulldog or a frozen schooner drink, built for a patio in August rather than a bar.
Pineapple and tequila is a genuinely good pairing regardless of the vessel. Blanco tequila is vegetal and peppery, pineapple is sweet and acidic with an edge of its own, and neither one has to be polite about it.
Glass: Beer mug | Strength: Medium | Serves: 1 | Prep Time: 3 minutes
Bartenders tip: Use a blanco tequila here. Anything aged is wasted under eight ounces of juice, and the clean pepper of an unaged bottle is what cuts through all that sweetness. The crushed ice is doing real work, so pack the mug properly and let it dilute, because three ounces of tequila undiluted in a drink this sweet gets away from you. A squeeze of lime is the single best addition and the recipe is worse for not including it. Stir from the bottom to pull the grenadine up through the juice rather than leaving it pooled underneath.
Steps
- Fill a beer mug three-quarters full with crushed ice.
- Add the tequila, pineapple juice and grenadine.
- Stir until the drink turns pink, and serve.
