The Pissing Parrot takes its parrot from Parrot Bay, the coconut rum the original recipe calls for. Add cranberry schnapps, pour it over ice in a pilsner glass and top it with a long pour of 7-Up, and the whole thing turns a pale, faintly suspicious shade of pink. As for the rest of the name, nobody has ever owned up to it, and given the color, that is probably for the best.
Underneath the name is an easy, low-effort cooler. The coconut rum brings a sweet, beachy flavor, the cranberry adds a tart edge, and the lemon-lime soda stretches it all into something light and fizzy that drinks more like a spritzer than a cocktail. It is the kind of drink built for a hot afternoon and a cooler full of ice.

Bartenders tip: Cranberry schnapps can be hard to find these days. A cranberry liqueur works just as well, or swap in an ounce of cranberry juice for a lighter, less sweet version. Any coconut rum will do in place of Parrot Bay. Pour the soda gently down the side of the glass to keep the fizz, and a squeeze of lime brightens the whole thing nicely.
