The Pineapple Drink does not pretend to be anything clever. It is rum, pineapple in two forms, sour mix and a splash of soda, built straight in the glass with no shaker and no straining. The name is about as descriptive as a name gets.
What makes it work is the chunks. Seven pieces of pineapple sitting at the bottom of a Collins glass do more than garnish duty, since they keep releasing flavor into the drink as it sits and give you something to eat at the end. That is a party drink structure rather than a cocktail bar one, and it is the reason this reads as a pitcher recipe that got scaled down to a single glass.

Bartenders tip: Four ounces of sweet and sour mix is a lot next to an ounce and a half of rum, so this leans sweet and tart before it leans boozy. If you want it to taste less like a mixer, cut the sour mix to two ounces and let the pineapple juice carry more of the load. Fresh chunks are worth the knife work here, since canned pineapple goes mushy in liquid within a few minutes. Build it over plenty of ice and drink it fast, because the Sprite is the first thing to go.
Ingredients
- 1 1/2 oz Light Rum
- 4 oz Sweet and Sour Mix
- 2 oz Pineapple Juice
- 2 oz Sprite
- 7 chunks Pineapple
Steps
- Drop the pineapple chunks into a Collins glass and pour the rum over them.
- Add the pineapple juice and sweet and sour mix.
- Top with Sprite, stir gently, and serve.
