Profile
The Pink Creole is mostly rum. Two ounces of it against a quarter ounce of cream, three dashes of lemon and a dash of grenadine, which means the supporting cast here is measured in fractions and the drink is closer to a rum martini than to anything creamy.
That restraint is the point. A quarter ounce of cream is not enough to make the drink opaque, only enough to soften the texture and take the sharp edge off the rum, and the same goes for the lemon. Most creamy rum drinks drown the spirit, and this one is built to do the opposite. It only works if the rum is worth tasting, which is a real constraint rather than a suggestion.

Bartenders tip: Use a rum with some character, because there is nowhere to hide here. An aged or lightly rested white rum gives you far more than a neutral bottling. Shake hard to get the small amount of cream properly integrated, since a quarter ounce can streak rather than combine if you are gentle with it. Dashes are imprecise by nature, so treat three dashes of lemon as roughly an eighth of an ounce and adjust upward if the drink tastes flabby.
