Profile
The Pink Fizzy is watermelon schnapps and lemon-lime soda in equal measure. There is no third ingredient and no technique beyond pouring, which makes it one of the simplest drinks in the library and about as honest as a name can get.
Equal parts is a heavy hand for a schnapps highball. Most recipes in this shape run one part liqueur to three of soda, so half a glass of schnapps makes this considerably sweeter and stronger than it looks. Watermelon schnapps is candy-sweet on its own, and the Sprite brings its own sugar rather than cutting anything, so the only thing keeping this in check is the ice.
Glass: Highball glass | Strength: Medium | Serves: 1 | Prep Time: 2 minutes
Bartenders tip: Pack the glass with ice and let it melt into the drink, because dilution is the only balancing force available here. A squeeze of fresh lime does more for this than any other single change, cutting the sugar and sharpening the watermelon. If you want it lighter, pour the schnapps to a third rather than a half and top with more soda. Add the Sprite last and stir once, gently, to keep the carbonation.
Steps
- Fill a highball glass with ice.
- Pour in the watermelon schnapps until the glass is half full.
- Fill with Sprite or 7-Up, stir, and serve.
