The Pumpkin Pie is a layered shot that tastes remarkably like a slice of spiced pie. Coffee liqueur goes in first, then Irish cream, then a thin layer of cinnamon schnapps on top, each poured slowly so the layers stay separate. There is no pumpkin in it, but the combination of coffee, cream and cinnamon comes surprisingly close.
It is sweet, creamy and warming, with the cinnamon hitting first and the coffee and cream following behind like the filling under a spiced crust. It is a great way to end a Halloween or Thanksgiving party.

Bartenders tip: Layering order matters here. Coffee liqueur is the heaviest, so it must go on the bottom, with the lighter cinnamon schnapps floated on top. Pour slowly over the back of a bar spoon held just above each layer. A light dusting of cinnamon or pumpkin pie spice on top makes it look even more like dessert.
