The Brain Hemorrhage is the Halloween shot. Peach schnapps goes in first, then a little Irish cream is poured in slowly and left alone. The acidity in the schnapps makes the cream curdle into clumps that look like, as the original recipe proudly put it, an internal organ. A drizzle of grenadine over the top finishes the gruesome look.
It is completely disgusting to look at and genuinely tasty to drink. Under all that drama is a sweet, simple mix of peaches, cream and a little cherry from the grenadine. It is always a hit at Halloween parties, mostly because of the reaction it gets when people see it.

Bartenders tip: Do not stir. The whole effect depends on letting the cream curdle on its own. Pour the Irish cream slowly down the side of the glass, and drizzle the grenadine over the cream rather than into the schnapps so it clings to the “brain.” Make them just before serving, since they do not look as good once they sit.
Steps
- Pour the peach schnapps into a shot glass.
- Slowly pour in the Irish cream without stirring. It will curdle into clumps that settle into the schnapps.
- Drizzle the grenadine over the cream and serve.
